Tofu Scramble (Indian Spiced)

Makes 2 large servings or 4 small servings.
Ingredients
1 pound firm tofu
2 teaspoons olive or sunflower oil
1/4 teaspoon turmeric
1/4 teaspoon curry powder
1/4 teaspoon cumin
1 teaspoon onion powder
1 tablespoon nutritional yeast
salt to taste
1/2 cup tomato puree
1/4 cup minced scallions
fresh ground pepper to taste
Directions
  1. Crumble tofu into skillet.
  2. Add olive oil and begin sauteing, breaking up any large pieces with a fork.
  3. Add remaining ingredients and mix well.
  4. Saute tofu for 3 to 5 minutes, until mixture is light yellow and thoroughly heated. Tofu should be soft.
